I don’t actually like mixed bean coffee, latte or some espresso based, I just like to keep me awake,
and yesterday my waifu ask me to go to local library in cimahi, and she offer me the greatest surabi ever,
and after that she ask me to buy coffee, well I usually just get latte to wake me up, but I see the banana cake slightly different
I remember there is two type cake there, plain banana cake and the cheese banana cake, get both of them, and get into car
I tried it a bit the banana cake, I still remember the very first time I taste it, I open my note and wrote it down why it taste so good.
omg the taste is trigger all my sense.
the crunch, the banana bite, the cheese, omg when I drink coffee its all makes sense why banana cake so match up with the coffee.
and this is the part I wrote everything down what I could remember so I will recreate this again
the main point I taste
-
obviously the cake is not soft
-
I could eat the crunchy of banana, and its not rotten, mixed with the cake
-
the border is harder and this makes outside layer crunchy but inside tender (not soft not hard)
-
I somehow taste the caramelize here (I immediatelly assume aren sugar)
-
the impossible part, there is no smell of freaking banana
and now lets begin the exploration
1st Attempt
some important note I need to show you, I’m not using AI to get recipe, I’m using AI to calculate the ingredient, like using overipe banana with or without skin it has different calculation, while I believe 100gr banana equal 20gr sugar
ok the very first thing I did is asking my wife for the recipe, I’m kinda overwhelming with the recipe on the internet, do this and that, so my wife making the banana cake and I watch it on how to make it, after that the banana cake is similiar but too soft, and the banana is not really caramelize and my wife actually using overripe banana the process where the banana will have the overwhelming sugar here.
I don’t have any important notes here, but what I believe is I will do this by my self.
so I recreate my wife recipee but I change some, one of the key is I don’t use the ribbon stage, its the stage I mix the egg and sugar until I could makes the ribbon over the egg, kinda almost creamy, and this part makes your cake super soft, and I don’t want it.
and also I change the part where the first step makes the margarine and sugar, instead I change it into aren sugar.
the result ?
better but still soft, I put too much margarine, no banana crunch, no caramelize (FUCK), still smell banana
this cost me around 25.000
2nd Attempt
no bacot, I research “caramelized banana cake”, and so here the change
-
cost me around 30.000
-
now caramelized banana cake mean, you cook the margarine + sugar + banana until its brown and smell good
-
I put less margarine, more sugar
-
just ripe banana
the result ?
I got the tender “eureka”!!!, no smell of banana, and caramelized (YEAH)!!!
and still I’m not satisfied, the border still same layer with inside, still no banana crunchy, and margarine is just minyak sawit.
3rd attempt
-
I use 1:2 ratio of honey and sugar
-
don’t blend it stupid, just use for to mash the banana
-
use unsalted butter
-
over ripe banana
-
and this cost me around 80.000
-
add cranberry sama kismis
the result ?
omg the similarity is 99.8%, can’t make it 100% because I don’t make coffee
